Sweet Plantain Patties

I’ve not experienced plantains very much. I’ve had them in a meatloaf before , delicious, and I am interested in making plantain chips because I love the crunch of a chip. I do not like the crumbs of chips that I drop everywhere on me, the table, the floor, and on top of my dog’s head. Why is it that some people can eat chips so nicely? They perfectly break

with nothing dropping out. I look like a big guppy trying to save the contents on the chip as it breaks in the most awful way.
I am somewhat experienced in baked goods though. I love them. I make my banana bread almost weekly, whether in muffins to go in the freezer, or in bread form. Sometimes I just get a little tired of it though. When that happens, I make sweet plantain patties that really look like small pancakes so I can toast them and eat with peanut butter and jelly. Or plain.
What you will need:
Coconut oil for pan
2 brown plantains (brown=sweet)
3 tablespoons of Grade B maple syrup (if I don’t have it, I’ll use grade A but B is better)
1/4 cup coconut oil, melted
3 eggs
1 tablespoon canned coconut milk
3 tablespoons coconut flour
1-2 teaspoons cinnamon1 teaspoon baking powder
pinch of salt
What to do:
Cut ends off of plantains, and then cut down the middle lengthwise. Peel off the skin.
In a large skillet over medium-high heat, add some coconut oil. Add the plantains in and brown each side. Usually takes 3-4 minutes each side. Don’t let them burn. Bleh.
Preheat oven to 350 degrees.
Once plantains are done cooking put them into a food processor. They always remind me of a big slug at this point.
Blend the plantains, then add maple syrup, coconut oil, eggs, and coconut milk. Blend until smooth.
Add in coconut flour, cinnamon, baking powder, and salt and puree.
Line a baking sheet with parchment paper and scoop out the deliciousness with a little ice cream scoop or a spoon like I do because I don’t have an ice cream scoop. Because that would make me want to buy ice cream.
Put em in the oven and bake for 20-25 minutes until slightly brown. If they’re still too mushy, keep them in longer.
These hold their heat so let them cool!
Gosh, these are so good. Eat them plain, cold or warm, it’s all good.
