Paleo Brownies

I love me a tasty baked good. And when life starts to get crazy (or maybe it’s just my hormones), I need me a tasty baked good. And that’s what happened one Friday night.

Because I can lose control very fast in the treat department, I do not keep anything around that I can pick at. Except chocolate chips, those babies are in almost any womans’s house. So as I am starving for something baked and cakey and somewhat clean, I search the internet for a recipe, hoping I will find gold.
I stumble across this brownie recipe from: http://thesweet-toothlife.com/2014/07/better-box-brownies-paleo/. I excitedly put this together and waited with bated breath. No, I didn’t. I saved some batter and ate that while I waited!
I have to say, these brownies are pretty darn good. They are most certainly not “just like brownies”. I don’t like when people say that. Uh, no, these are not like regular brownies, they have no sugar, no butter, no flour, all the tasty stuff is taken out!!!
I personally enjoy healthy but tasty treats and this one was sure to hit the spot. Especially when it’s very cold from the fridge and smothered with some almond butter on top. Delish!
Ingredients:
•⅓ cup Enjoy Life chocolate chips (or use whatever kind you like)
•⅓ cup coconut oil (melted)
•¼ cup honey
•3 eggs
•¾ cup coconut sugar
•½ cup almond meal
•1 Tablespoon coconut flour
•¾ cup unsweetened cocoa powder (sifted and spooned into measuring cup)
•⅛ teaspoon baking soda (omit if using Dutch-processed cocoa powder)
Instructions:
•Preheat your oven to 325°F. Lightly grease a 8x8 or 9x9 baking pan.
•Melt chocolate chips and coconut oil together. I put mine in a microwave safe bowl and microwaved for 30 seconds and stirred.
•Once the chocolate mixture is no longer hot to the touch, pour the chocolate mixture into the bottom of a food processor (or blender) and add all of the remaining ingredients, in the order listed.
•Blend until smooth.
•Scrape the brownie batter into the prepared pan, and smooth into an even layer with a wet spatula.
•Bake for 30-35 minutes or until toothpick inserted comes out clean.
